HISTORY OF CAROB
Britain has been using carob for some 20 years, but the Greek Theophratus recorded in 4BC that his contemporaries called the carob the Egyptian fig. Records show that Ancient Egyptians used the gummy
properties of carob seed as an adhesive in binding mummies. The seeds/pods have been found in Egyptian tombs. The Romans are said to have eaten the fresh green pods for their unique, natural sweetness.
Many scholars believe that John the Baptist lived on carob pods as "the locust bean" as another name for carob.
CAROB TREE
The carob tree is a member of the legume (pea) family. It grows in Mediterranean areas. Carob likes arid conditions which are naturally alien to fungus and pests, and therefore usually devoid of chemical/pesticide
sprays for its cultivation. The large trees grow to 15m in 50 years. It produces no fruit for the first 15 years of its life, but will fruit well into its old age. Carob trees can produce 1 ton of beans
in a harvest.
The trees flower in September and October. The flowers on female carob trees must be pollinated by pollen from the male trees. Carob pods are a dark glossy brown as they mature. They are
4" to 10" long
and weigh 0.75 to 1.5 oz. Each pod contain can contain up to 15 seeds in four series of oval holes, bearing a seed resembling a watermelon seed.

Carob is 80% protein and contains vitamins A, B, B2, B3 and D. It is also high in calcium, phosphorus, potassium and magnesium and contains iron, manganese, barium, copper and nickel.
